Creamy Avocado Pasta with Garlic and Lemon

Avocado pasta is my favorite quick dinner for evenings when I get home late. The sauce blends in seconds, and all you need to do is boil water for the pasta. It’s creamy, vegetable-packed, and ready in about 15 minutes — a family-friendly meal everyone can enjoy.

I make this creamy avocado pasta at least once a week. It’s my go-to for fast weeknights because the sauce is no-cook and comes together in the blender. My kids are picky about tomatoes, so I sometimes stir extra corn into their plates and serve the cherry tomatoes on the side. Use the following for about 2 servings:

  • 1/2 cup grated Parmesan cheese (optional; omit or substitute with a vegan alternative if needed)
  • 1 cup sliced cherry tomatoes (optional)

How to make avocado pasta sauce

  1. Bring a large pot of salted water to a boil for the pasta. Cook the pasta according to package directions until al dente.
  2. While the pasta cooks, halve and pit the ripe avocados. In a blender, combine the avocado flesh, olive oil, lemon juice, Parmesan (if using), salt, and pepper. Blend until smooth.

  3. If the sauce is too thick, stream in 1/2 to 3/4 cup of the hot pasta cooking water while blending, until you reach a creamy, silky consistency. Taste and adjust salt, pepper, or lemon as needed.

  4. Drain the pasta, reserving a little cooking water. Toss the hot pasta with the avocado sauce until evenly coated, adding a splash of reserved pasta water if needed to loosen the sauce. Stir in halved cherry tomatoes or add them on top.

Tips to prevent the sauce from turning brown

Avocado oxidizes and will darken when exposed to air. The lemon juice in this recipe slows that process, but leftovers may still deepen in color overnight. To keep the sauce bright if you plan to serve it later: store the sauce in an airtight container, press a layer of plastic wrap directly onto the surface, and pour a thin layer of olive oil over the top before sealing. Keep the pasta separate, tossed lightly with olive oil and the cherry tomatoes, and combine just before serving.

Can you reheat this?

Yes. Refrigerate leftovers in an airtight container to slow browning. Reheat gently over low heat in a saucepan, stirring constantly and adding a splash of water or olive oil to restore creaminess. For meal prep, keep the sauce and pasta stored separately and toss together just before eating.

Serving and variation ideas

This sauce is versatile: use any pasta shape, stir in cooked shrimp or chicken for extra protein, or swap Parmesan for a vegan substitute made from blended cashews and nutritional yeast. For a kid-friendly twist, serve the tomatoes on the side or mix in sweet corn for texture and sweetness.
