Fall recipes have been everywhere lately — pumpkin and spice are filling my feeds. I went a different direction this week. After celebrating Ice Cream week recently, I wanted an easy, no-bake snack that comes together in minutes. The result: simple Peanut Butter Clusters. No pumpkin, just four ingredients and a lot of flavor.

These clusters were created in just over twenty minutes — from the idea to mixing, and then the all-important taste test. They are incredibly simple to make, using just peanut butter, icing sugar, maple syrup and cornflakes. The icing sugar lends a smooth, melt-in-your-mouth texture while the maple syrup lifts the flavor and adds a pleasant sweetness. They work perfectly as a quick grab-and-go snack, a lunchbox treat, or a small dessert. For an extra indulgence, imagine drizzling them with a little chocolate.

Peanut Butter Clusters
Ingredients
- 1 Cup Peanut Butter
- 6 Tbsp Icing Sugar
- 3 Tbsp Maple Syrup
- 2½ Cups Cornflakes
Instructions
- In a mixing bowl, combine the peanut butter, icing sugar and maple syrup until smooth and evenly blended.
- Gently fold in the cornflakes, taking care not to crush them too much. Mix until the flakes are evenly coated.
- Scoop or roll the mixture into small balls, about a tablespoon each, and place them on a tray lined with parchment paper.
- Refrigerate for around 2 hours to firm up. Once set, store in an airtight container in the fridge.

These clusters are forgiving and easy to adapt. If you prefer a different texture, use crunchy peanut butter for extra bite, or swap a portion of the cornflakes for crushed rice cereal to change the mouthfeel. For nut-free households, a sunflower seed butter can be used in place of peanut butter — keep in mind the flavor and texture will vary slightly.
Tips for success: use a good-quality peanut butter with a creamy texture for best results; if the mixture feels too wet to shape, add a few extra tablespoons of cornflakes or chill the bowl for 10–15 minutes and try again. To make uniform clusters, use a small cookie scoop or tablespoon to portion the mixture before rolling.
Storage and serving: keep the clusters refrigerated in an airtight container for up to one week. They also freeze well—place them in a single layer on a tray to freeze, then transfer to a freezer-safe box for up to three months. Thaw in the refrigerator before serving.
