Rainbow Fudge Made with Lucky Charms

Ingredients:

  • 1 cup white chocolate chips
  • 1 tub vanilla frosting
  • 8 ounce (half a package) vanilla CandiQuik or other melting white chocolate
  • ½ cup marshmallows from a box of Lucky Charms
  • Gel or liquid food coloring (choose a few colors for a rainbow effect)
What is melting chocolate?

Melting chocolate (sold near chocolate chips in most grocery stores) is formulated to melt smoothly for dipping and molding, then harden with a glossy finish.

You will also need an 8 x 8 inch square baking dish, parchment paper (or foil sprayed lightly with nonstick spray), microwave-safe bowls, and spoons for mixing. Gel food coloring gives brighter, truer colors, but liquid food coloring will work if that’s what you have.

Making rainbow fudge

Instructions:

  1. Line the baking dish with parchment paper so the fudge can be lifted out easily.
  2. In a microwave-safe bowl, melt the white chocolate chips and the CandiQuik in 30-second intervals, stirring between each interval, until smooth.
  3. Add the entire tub of vanilla frosting to the melted white chocolate and microwave for 30 seconds more. Stir until fully combined and smooth.
  4. Divide the mixture evenly into three bowls. Quickly stir food coloring into each bowl until you reach the shades you want. Work fast—the mixture will begin to firm up as it cools. If needed, reheat briefly to soften.
  5. Pour the colored fudge into the prepared baking dish, adding colors in your preferred pattern—stripes, dollops, or random patches all work well.
  6. Scatter half of the Lucky Charms marshmallows over the top of the poured fudge.
  7. Use a knife or the handle of a spoon to gently swirl the colors and marshmallows so they blend into a marbled rainbow pattern. Some marshmallows should sink slightly while others stay on top.
  8. Top with the remaining marshmallows.
  9. Refrigerate the dish for about 1 hour, or until the fudge is firm.
  10. Lift the fudge from the pan using the parchment paper, peel off the paper, and cut into squares with a sharp knife. Store leftover fudge covered in the refrigerator.
