Rosemary Chicken Dinner

Rosemary and chicken are a classic match. To keep the dish light and bright—especially when asparagus is in season—this version leans on fresh lemon juice, garlic and olive oil. The lemon wakes up the rosemary and adds a pleasant acidity that complements the natural sweetness of roasted asparagus. This recipe is naturally low in carbohydrates and can be adjusted to be higher in fat for a stricter ketogenic approach by increasing the olive oil or adding a pat of butter.

The marinade doubles as a basting sauce, so a little goes a long way. Marinating the chicken for a few hours concentrates the flavors, and adding the asparagus partway through cooking ensures it stays tender-crisp rather than overcooking.

How to Choose Good Asparagus

  • Look for firm, bright green stalks; medium thickness is versatile and easy to cook evenly.
  • Check the tips: they should be tight, firm and a vivid green or purplish color—tips are the first part to become limp.
  • Snap test: fresh asparagus stalks should break cleanly with a crisp snap. Limp or bendy stalks are past their prime.
  • Avoid stalks with blemishes or soft spots. Trim the woody ends before cooking for the best texture.

Mike’s Tips & Tricks for Rosemary Chicken

  • Use lemon-flavored olive oil if you want an extra citrus boost. It’s great in this marinade and useful around the kitchen.
  • Choose a pan with sides to keep the marinade and juices from spilling; a rimmed baking sheet or large ovenproof skillet works well.
  • Add the asparagus later in the bake so it stays tender-crisp. If you put it in at the start the spears can become limp and overcooked.

Happy low-carb cooking! This one-pan meal is ideal for busy weeknights and scales easily for family dinners or meal prep.

Ingredients

  • 1/2 cup olive oil (lemon-flavored olive oil recommended for extra citrus)
  • 1/4 cup lemon juice
  • 2 tbsp minced fresh garlic
  • 2 tbsp dried rosemary (or 1/3 cup fresh rosemary, finely chopped)
  • 1 tsp sea salt
  • 4 chicken breasts
  • 1 lb fresh asparagus, washed and trimmed
  • Extra sea salt and freshly cracked black pepper for serving

Instructions

  1. Combine the olive oil, lemon juice, minced garlic, rosemary and sea salt in a food processor or a container suitable for a hand blender. Process until the mixture is smooth and emulsified.
  2. Place the chicken breasts in a shallow container or zip-top bag. Use about one-third of the marinade to baste the chicken, then cover the chicken with the remaining sauce and refrigerate for a few hours to marinate.
  3. Preheat your oven to 350 °F (175 °C).
  4. Remove the chicken from the refrigerator and arrange the breasts on a large baking sheet or in a large ovenproof pan.
  5. Bake the chicken for 20 minutes. After 20 minutes, add the asparagus to the pan. Re-baste the chicken with the remaining sauce and drizzle some over the asparagus so both pick up the flavors.
  6. Continue cooking until the chicken reaches an internal temperature of 165 °F (74 °C) and the asparagus is tender-crisp—about another 10–15 minutes depending on thickness.
  7. Remove from the oven, season asparagus with extra sea salt and pepper to taste, and serve immediately.
