Ingredients

  • 14 ounces (400 grams) sirloin steak, sliced thinly
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 7 ounces (200 grams) broccoli florets
  • 3 cloves garlic, minced

Instructions

  4. Make the sauce: Whisk together lime juice, dark soy sauce, sugar and chopped chilies in a bowl until the sugar dissolves. Pour the sauce into the pan with the vegetables, bring to a boil and simmer 2–3 minutes to slightly thicken.
  5. Cook the noodles: Meanwhile, cook the fresh egg noodles in boiling water according to package directions. Drain and keep warm.
  6. Combine: Return the beef to the pan, add the cooked noodles and spring onions. Toss everything together over medium heat until the noodles are evenly coated in the glossy sauce and the beef is heated through.
  7. Garnish and serve: Divide between bowls and finish with chili flakes, extra chopped chilies and sliced spring onions for color and bite.
