Crock Pot Rosemary Chicken Recipe
If you enjoy moist, tender chicken infused with fresh herbs, this Crock Pot Rosemary Chicken is an easy weeknight favorite. A whole chicken slow-cooked with rosemary, garlic, onions and baby red potatoes delivers comforting flavor with minimal effort.
How long does it take to cook chicken on high in a crock pot?
A whole chicken cooks in a crock pot on high in about 3 to 4 hours. If you prefer slow cooking, set the crock pot to low and allow 7 to 8 hours for the chicken to be fully cooked and tender.

Do you need fresh rosemary to make rosemary chicken?
You can use dried rosemary if fresh isn’t available, but fresh rosemary gives a brighter, more aromatic flavor. If you can, grow a small rosemary plant or keep fresh sprigs in the fridge—fresh herbs make a noticeable difference in slow-cooked dishes.
Fresh rosemary is especially fragrant when added to the cavity of the bird and tucked among the potatoes and onions in the crock pot.

How to make Crock Pot Rosemary Chicken
Cooking a whole chicken in a crock pot locks in moisture so the meat stays juicy and absorbs the flavors of the aromatics. This recipe layers baby potatoes, onions, garlic and rosemary beneath the chicken so everything steams together as it cooks.
The main flavorings are fresh rosemary, onions, garlic, salt, pepper and paprika, with a splash of chicken stock and white cooking wine. The wine adds depth without making the dish taste like wine—just a subtle, savory enhancement.
Cooking with white cooking wine
A small amount of white cooking wine brightens the sauce and lifts the overall flavor. If you prefer not to use wine, substitute additional chicken stock or a splash of apple cider for a similar balance.
Adding the wine to the crock pot at the start allows the flavors to mingle slowly with the juices released by the chicken and vegetables.

How to brown the chicken skin for crock pot recipes
Because the crock pot environment steams the chicken, the skin won’t brown during cooking. To get a golden, appetizing skin, transfer the cooked chicken to a roasting pan and place it under the broiler for a few minutes. Broil at 475°F (about 245°C) for 5–10 minutes, watching closely, until the skin is evenly golden.
This quick finishing step makes the dish more appealing to picky eaters while keeping the meat juicy and flavorful.

- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Rinse and quarter the potatoes and place them in the bottom of the crock pot.
- Arrange three-quarters of the onion quarters, six cloves of garlic and one or two rosemary sprigs (depending on size) over the potatoes. Sprinkle with salt and pepper.
- Pour the chicken stock and white cooking wine over the potatoes and aromatics.
- Prepare the chicken: remove the neck and gizzards from the cavity, rinse the bird, and pat dry with paper towels.
- Rub the chicken all over with paprika, salt and pepper. Wash hands thoroughly after handling raw poultry.
- Place the remaining onion quarters and rosemary sprigs inside the cavity of the chicken. Put the chicken on top of the potatoes in the crock pot.

Notes and tips
- For best flavor, use fresh rosemary when possible. If using dried rosemary, crush it slightly before adding.
- Substitute extra chicken stock for the white cooking wine if you prefer to avoid alcohol.
- To speed up browning, you can also finish the chicken in a hot oven (450°F/230°C) for 10–15 minutes instead of broiling, but monitor closely.
- Leftovers keep well refrigerated for 3–4 days and can be reheated gently in the oven or sliced cold for sandwiches.
