Ingredients

  • 2 cups unsweetened almond milk
  • ⅓ cup fresh berries, chopped (I used strawberries)
  • ½ cup chia seeds
  • 2 Tbsp stevia (or another sweetener to taste)
  • 1 tsp vanilla extract

Instructions

  1. Combine the almond milk, chia seeds, sweetener, and vanilla in a mason jar or bowl. Mix or shake well until the chia seeds are evenly distributed and not clumped together. If you prefer a smoother texture, blend briefly in a blender or Magic Bullet before chilling.
  2. Place in the refrigerator and allow to set overnight. For best texture, shake or stir again after about an hour to break up any settling, then let it chill until fully thickened.
  3. Before serving, stir in or top with the chopped berries. Optional additions include pumpkin puree with cinnamon, nut butter, or other fresh fruit of your choice.
