This helps keep the dough soft and creates that signature sticky interior. In my version I use coconut cream for extra richness, but whole cream or half-and-half will work equally well.

Dough

  • 4 cups all-purpose flour
  • 1 cup warm milk

  • 1 cup brown sugar

Frosting

  • 2 cups powdered sugar
  • 6 ounces cream cheese (softened)
  • 1/3 cup salted butter (softened)
  • 1/2 tablespoon maple extract or vanilla extract

How to make cinnamon rolls

If you have a stand mixer, fit it with the dough hook for the easiest handling; otherwise, a large mixing bowl and some elbow grease will do the job.

Creating the dough

  1. Combine the eggs, melted butter, sugar, warm milk, and instant dry yeast in a large bowl or the bowl of a stand mixer. Mix until blended.
  2. Add the salt and flour and continue mixing until a rough dough forms.
  3. Knead the dough for 5–7 minutes (increase mixer speed if using). The dough should feel slightly sticky; if it’s too wet, add up to 1/2 cup (about 68 g) extra flour, a little at a time.
  4. Cover and let the dough rise until doubled in size, about 30 minutes. While it proofs, prepare the filling.

Mixing the filling

  1. Mix the softened butter, brown sugar, cinnamon, and the dash of nutmeg until well combined and spreadable.

1. Lightly flour a work surface. Roll the dough into a large rectangle roughly 24″ x 16″.

2. Spread the filling evenly over the dough, leaving a little margin along one edge.

3. Roll the dough tightly like a jelly roll, then slice into even pieces. For standard rolls, cut into 12 slices; for a cake-style presentation, cut the roll in half lengthwise and arrange pieces to form a round platform.

4. Place the slices in a greased pan so they have room to expand.

6. Preheat the oven to 375°F (190°C).

7. Just before baking, warm the coconut cream (or your choice of cream) and pour it evenly over the rolls so they are well soaked. This is the step that yields the gooey interior.

8. Bake for about 20 minutes. Baking time may vary with pan type and roll thickness; bake a few minutes longer if you prefer more browning.

Make the frosting

  1. Beat the softened cream cheese, softened butter, maple or vanilla extract, and powdered sugar until smooth and spreadable.

Frost the rolls

  1. After the rolls come out of the oven and have cooled slightly, spread or pour the frosting over them while still warm so it melts into the crevices.
  2. If you’re trying the chili variation and the chili is already prepared, serve a small scoop on top for a playful savory contrast.
  3. Serve warm and enjoy.
