This recipe is straightforward and fast to assemble. Combine the filling ingredients in a large bowl, then spoon the mixture into crescent roll dough, seal, sprinkle with cheese, and bake. Filling the puffs is the only step that takes a bit of time, but it’s easy and forgiving—some filling may leak while baking, and that’s fine.

Step-by-step Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, green chilies, enchilada sauce, cream cheese, 1 cup of the shredded cheese, corn, black beans, diced tomatoes, and taco seasoning. Mash and stir until evenly combined.
  3. Keep the crescent roll dough chilled until you’re ready to assemble. Cold dough is easier to handle and less likely to tear.
  4. Place two crescent triangles together to form a rectangle and pinch the seam closed. Spoon about 2 heaping tablespoons of filling into the center.
