Cafe Rio Chicken – an easy, delicious shredded chicken that tastes like the Cafe Rio version. Perfect for salads, burritos, tacos, quesadillas, and more.

I enjoy recreating favorite fast-casual dishes at home, and this Cafe Rio-style shredded chicken is one of my go-to recipes. It’s simple to prepare, full of bright, slightly tangy flavor, and very versatile. I usually make it in the Instant Pot for speed, but you can easily use a slow cooker if you prefer. This version isn’t spicy, so it’s great when you want mild, family-friendly Mexican-style chicken.

Only a handful of ingredients yield a juicy, flavorful shredded chicken you can use in many meals. It’s ideal for meal prep: make a double batch and freeze portions for quick lunches or weeknight dinners.

How to Make Cafe Rio Chicken

  1. Combine the Italian dressing, minced garlic, chili powder, ground cumin, ranch dressing mix, and water in a bowl and stir until blended.
  2. Place the chicken in the Instant Pot or slow cooker and pour the sauce over the top, ensuring the pieces are coated.
  3. Instant Pot: Cook on high pressure for 12 minutes for fresh chicken or 17 minutes for frozen. Allow a quick release and shred the chicken with two forks. Toss the shredded chicken in the sauce left in the pot.
  4. Slow cooker: Cook on low for 4–6 hours, or until the chicken is tender enough to shred. Shred and mix with the sauce.

Tip: For deeper flavor, let the shredded chicken sit in the sauce for 10–15 minutes before serving so it soaks up more flavor. To freeze, portion into meal-sized bags and freeze for up to 3 months. Thaw overnight in the fridge before reheating.

At Cafe Rio, the popular taco salad is served in a large flour tortilla shell with melted cheese, rice, beans, chicken, lettuce, salsa, cheese, tortilla strips and their signature dressing. At home you can recreate that by layering this shredded chicken over rice and beans, then adding fresh toppings and a drizzle of dressing. Other great uses: burritos, quesadillas, tostadas, enchiladas, nachos, or simply served over a salad for a lighter meal.

Ingredients (serves about 8)

  • 2 pounds boneless skinless chicken breasts
  • 3/4 cup Italian dressing
  • 3 cloves garlic, minced
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon ground cumin
  • 3 tablespoons ranch dressing mix
  • 1/2 cup water

Instructions

  1. Whisk together the Italian dressing, garlic, chili powder, cumin, ranch dressing mix, and water until evenly combined.
  2. Place the chicken in the bottom of the Instant Pot or slow cooker and pour the sauce over the chicken.
  3. Instant Pot: Seal and cook on high pressure for 12 minutes for fresh chicken or 17 minutes for frozen. Perform a quick release, then remove the chicken and shred with two forks.
  4. Slow cooker: Cook on low for 4–6 hours until the chicken is tender enough to shred.
  5. Return shredded chicken to the pot, stir to coat with the sauce, and let sit a few minutes to absorb flavor before serving.

Notes

You can swap chicken thighs for breasts if you prefer darker meat. This recipe is mild — increase the chili powder or add a pinch of cayenne if you want more heat. Leftovers freeze well: cool the chicken, place into freezer-safe bags or containers, and freeze for up to three months.
