The first attempt was a learning experience — I’d never made an authentic red chile sauce and my first try missed the mark. A second version leaned too taco-like and the original idea felt lost. Rather than force a flavor I didn’t understand, I decided to play to my strengths.
Chipotle peppers are familiar territory for me, so I focused on them. By using canned chipotles in adobo and balancing savory, sweet, and tangy elements, I developed a sauce that finally made the dream real. The finished Slow Cooker Chipotle Beef is bold and smoky, with a pronounced heat tempered by brown sugar and honey. If you prefer milder dishes, halve the amount of chipotle peppers and sauce — otherwise, prepare for a flavorful punch.

Chuck Roast
- 3 lbs chuck roast
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
Chipotle Sauce
- 7 ounces canned chipotle peppers in adobo (use half the can for less heat)
- 1 cup beef broth
- 8 cloves garlic, minced
- 1/2 teaspoon cumin
- 2 teaspoons smoked paprika
- 1/2 teaspoon cinnamon
- 2 teaspoons onion powder
- 1 cup ketchup
- 2 teaspoons salt
- 2 teaspoons Dijon mustard
- 4–6 tablespoons brown sugar
- 1/8 cup vinegar
- 1/8 cup Worcestershire sauce
- 1/2 cup strong brewed coffee or 1 tablespoon instant coffee dissolved in water
- 1/3 cup honey
Instructions
- Pat the chuck roast dry, then season both sides generously with salt and pepper. Dredge the roast in the flour to coat all sides.
- Heat the olive oil in a large skillet over medium-high heat. Sear the roast 3–4 minutes per side until a brown crust forms. Transfer the seared roast to a slow cooker or Dutch oven and reduce the skillet heat to medium.
- In a food processor or blender, combine the beef broth, chipotle peppers with adobo sauce, and garlic. Puree until smooth.
- Pour the chipotle mixture into the skillet. Add cumin, smoked paprika, cinnamon, onion powder, ketchup, salt, Dijon mustard, brown sugar, vinegar, Worcestershire, coffee, and honey. Stir to combine and bring to a gentle simmer. Cook 5–10 minutes, stirring often, to let the flavors meld and the sauce thicken slightly.
- Pour the hot sauce over the seared chuck roast in the slow cooker. Cover and cook on low for 8–9 hours, or until the meat is fork-tender and easily shreds.
- Remove the roast and shred it with two forks. Skim excess fat from the sauce, return the shredded beef to the slow cooker, and let it sit in the sauce for 10 minutes to absorb the juices before serving.
Notes
If you prefer a milder dish, use only half the canned chipotle peppers and reserve the remaining sauce for another use. Searing the meat is optional but recommended for deeper flavor. This beef freezes well and reheats nicely for quick meals later in the week.
