Thanksgiving is less than three weeks away, and though our gathering will be the smallest we’ve had, I’m planning a full holiday spread: a whole turkey, all the classic sides, three pies and homemade ice cream. Keeping the celebration meaningful—even small—makes it feel special, and with a few smart preparations you can enjoy a relaxed, delicious holiday too.

Below is your dinner planner for the week, designed to be flavorful, balanced and largely make-ahead friendly. Each day lists the main recipe and a complementary dish to round out the meal.
Meatless Monday: Roasted vegetable lasagne
Tuesday: Mediterranean fish stew
Wednesday: Cauliflower steaks with cauliflower purée and mint pesto; endive and pear salad with walnuts and Parmesan
Thursday: Whole roasted chicken; fall salad with savory granola
Friday: Soft polenta with mushroom ragout (from Kitchen Matters, p. 144) and garlicky kale (p. 113)
Saturday brunch: Green goddess quesadillas (from Quicker Than Quick, p. 127)
Sunday: Slow-cooker white bean soup with sausage and collard greens; mushroom and leek quiche with sweet potato crust
To help you enjoy a calm week and a smooth Thanksgiving day, here are simple make-ahead tasks organized by day. These suggestions save time and reduce last-minute stress while keeping flavors fresh.
Sunday (ideal prep day):
- Roast and cool vegetables for the lasagne; store refrigerated in airtight containers.
- Prepare salad dressings and vinaigrettes; keep in small jars and shake before serving.
- Wash and dry salad greens; store in a crisping container or wrapped in paper towels to maintain freshness.
- Make mint pesto and store lightly covered—pesto freezes well if you need to keep it longer.
- Bake savory granola for salads and breakfasts; it keeps well at room temperature for several days.
Tuesday:
- Slice and portion cauliflower steaks so they’re ready to season and grill or roast quickly.
Thursday (day-of prep):
- Wipe mushrooms clean and keep them dry until ready to cook.
- Finish any last-minute reheats and assemble salads just before serving for best texture.
Little timing tips: plan to reheat sauces gently on the stovetop to preserve texture, and crisp items under the broiler or in a hot oven just before serving. Label containers with the date and contents so you can quickly find what you need.
