Winter Fruit Salad Ingredients

  • Pomegranate seeds – one cup. You can buy seeds pre-packaged or remove them from a whole pomegranate.
  • Clementines – about 10, peeled and separated into segments.
  • Kiwi – 6 whole, peeled and sliced. Cut kiwi just before serving if you want it to stay firm.
  • Bananas – 2 ripe bananas, peeled and chopped. Add them just before serving to avoid browning.
  • Fresh mint leaves – a few leaves, torn or chopped for garnish and flavor.

Lime Poppyseed Dressing

  • Honey – about 1/4 cup for a touch of sweetness; substitute maple syrup for a vegan option.

How To Make

  • Start by cutting off the crown and base of the pomegranate to reveal the inner structure.
  • Score the skin from top to bottom into 4–6 sections, following the natural ridges but not cutting through the seeds.
  • Gently pull the sections apart over a bowl and use your fingers or a spoon to loosen the seeds; they should release easily.
  • Be mindful that pomegranate juice can stain—work over a bowl and consider wearing an apron.
