Over time I adopted a few techniques to ensure consistently smooth, creamy mashed potatoes, and this recipe reflects those simple, reliable steps.
The result is a deeply flavorful mash: sharp cheddar folded into warm potatoes with garlic and rosemary, rounded out by butter and a touch of crème fraîche or sour cream for creaminess. These are great for holiday dinners, weeknight sides, or whenever you want something indulgent and homey.
Yukon gold potatoes

For the creamiest texture, use Yukon Gold potatoes. They mash smoothly and have a naturally buttery flavor. If you prefer a firmer, more textured mash, Russets also work well.
You’ll need fresh garlic, sharp white cheddar (freshly grated for best texture), good-quality salted butter, crème fraîche or sour cream, warm half-and-half, finely minced rosemary, Kosher salt, and white or black pepper. Avoid pre-shredded cheese, which often contains anti-caking agents that can make the potatoes grainy.
Choose potatoes that are roughly the same size so they cook evenly and reach the same level of doneness.

Make-ahead & store leftovers

Instructions
Boil the Potatoes

Peel the potatoes, wash well, and cut into uniform pieces: halves for small potatoes or quarters for large ones. Uniform pieces ensure even cooking.

Place the potatoes in a large pot and cover with at least 2 inches of cold water. Add several pinches of salt. Bring to a rolling boil over medium-high heat.

Make the Mashed Potatoes

Rice or mash the warm potatoes with a ricer, masher, or mixer until smooth. Stir in the minced garlic right away so the residual heat softens its bite.

Fold in the grated white cheddar, a handful at a time, until melted and evenly incorporated. Add the melted butter, crème fraîche or sour cream, minced rosemary, 1/2 teaspoon kosher salt, and several dashes of white pepper.

To Reheat the Potatoes

Bake: Preheat oven to 350°F. Spoon potatoes into a lightly greased dish, stir in a splash or two of half-and-half, cover, and bake 20–30 minutes until hot and bubbly.

Microwave: Place in a microwave-safe bowl, heat on high for 1 minute, stir, and continue in 1-minute intervals until hot. Add more half-and-half or melted butter if needed.

Slow cooker: To hold for hours, transfer to a slow cooker set to WARM and stir occasionally, adding extra butter or half-and-half if they begin to dry out.
Notes
If you prefer a milder garlic flavor, sauté the garlic briefly in a tablespoon of butter before adding it to the potatoes.
Add the half-and-half gradually to control the final texture. Start with the amounts listed and increase if you like a looser mash.
Start with 1/2 teaspoon of kosher salt and adjust to taste; the final amount depends on the saltiness of your cheese and butter.
White pepper keeps the mash visually uniform, but black pepper works just as well flavor-wise.
Do not over-mix; stir just until everything is combined to maintain a light, fluffy texture.
