Some kind of vegetable at dinner is essential in my house, but fresh produce isn’t always available. That’s when I rely on frozen cauliflower rice. Keep a bag or two in the freezer and you can have a fast, creamy, and cheesy side dish ready in minutes. This Cheesy Cauliflower Rice pairs well with chicken, steak, pork, or any protein you’re serving.

This easy side dish is so tasty my kids don’t realize it’s mostly vegetables.

This recipe is essentially mac and cheese with the pasta swapped for cauliflower rice, making it a kid-friendly, lower-carb option the whole family will enjoy. The cauliflower soaks up the cheese and seasoning, creating a creamy, comforting side without the heaviness of traditional pasta.

Frozen riced cauliflower is widely available in grocery freezer aisles and is incredibly versatile. For this version, you’ll microwave the cauliflower briefly and finish it in a skillet with butter, milk, cream cheese, and cheddar. It takes about five minutes in the microwave and five minutes on the stove — ten minutes from start to finish for a warm, cheesy vegetable side.

Because the base is neutral, you can adapt flavors freely. Add garlic powder, smoked paprika, or a pinch of cayenne for heat. Top with crispy bacon, scallions, or jalapeños if you want extra texture and flavor. It’s a simple recipe that elevates any weeknight meal without extra fuss.
