Ingredients

  • 1 kilo sweet potatoes, peeled and diced
  • 1 can full-fat coconut milk
  • 2 medium carrots, diced
  • 1 onion, diced
  • 1 bulb garlic (use less if preferred), minced
  • 3 tbsp curry masala powder
  • 1 tbsp cayenne powder or preferred ground pepper (adjust to taste)
  • 1 tsp smoked paprika (optional)
  • 1/3 cup nutritional yeast (optional, for a savoury, cheesy note)
  • Water or vegetable stock, enough to cover the vegetables plus about 2 extra cups
  • Salt and black pepper to taste

Instructions

  1. Heat a little oil or a splash of water in a large pot over medium heat. Sauté the diced onion and minced garlic until softened and fragrant, about 4–6 minutes.
  2. Add the diced sweet potatoes and carrots to the pot, then stir in the curry masala, cayenne, and smoked paprika (if using). Cook for a couple of minutes to bloom the spices.
  3. Pour in one can of full-fat coconut milk and add enough water or vegetable stock to just cover the vegetables. For extra creaminess, add two more cups of liquid in addition to the covering amount.
  4. Bring the soup to a boil, then reduce heat and simmer gently until the sweet potatoes are tender when pierced with a fork, about 15–25 minutes depending on size of the dice.
  5. If using nutritional yeast, stir it in once the vegetables are soft. Season with salt and black pepper to taste.
  6. Carefully blend the soup until smooth. Use an immersion blender directly in the pot for convenience, or transfer the soup to a regular blender in batches. When blending hot liquids in a countertop blender, vent the lid slightly to allow steam to escape and prevent pressure from building up.
  7. Return the blended soup to the pot to warm through if needed. Adjust seasoning and thickness—add water or stock to thin, or simmer a little longer to thicken.
  8. Serve hot with your choice of toppings and garnishes (see suggestions below).

Cool the soup completely before refrigerating or freezing. In the fridge it will keep for 3–4 days. For longer storage, portion into airtight containers or freezer bags and freeze for up to 2–3 months. Thaw overnight in the fridge, then reheat gently on the stove, stirring occasionally.
