Ingredients:

For the ricotta spread:

  • 1 cup whole milk ricotta
  • 1/2 cup Fisher Sliced Almonds
  • 1/4 teaspoon almond extract
  • 1 teaspoon honey
  • zest from an orange, optional

For serving:

  • hearty whole grain toast, English muffin or bagel
  • sliced peaches or other fresh fruit
  • extra Fisher sliced almonds
  • extra honey for drizzling

Directions:

  1. Combine the ricotta, sliced almonds, and almond extract in a medium bowl. Gently stir until evenly combined. If using orange zest, fold it in now.
  2. Transfer the spread to a serving bowl and sprinkle with a few additional sliced almonds. Drizzle a teaspoon of honey over the top for presentation.
  3. Toast your bread or warm your muffins. Spread about 1 tablespoon of the ricotta mixture on each piece of toast or muffin half.
  4. Top with sliced peaches (or berries, figs, or other seasonal fruit), a few more sliced almonds, and an extra drizzle of honey to taste. Serve immediately.
