Microwaving or stovetop for ganache?

Can I bake the cake on the stovetop (in a pan)?

How to make Eggless Chocolate Mousse Cake

Bake the chocolate cake

  1. Preheat the oven to 350°F (175°C). If cooking in a pan, preheat the pan and stand for 10 minutes on medium heat.
  2. Line a cake pan with parchment and lightly grease it.
  3. Sift together the all-purpose flour, cocoa powder, baking powder and baking soda until lump-free. Stir in a pinch of salt.
  4. In a separate bowl combine sugar, vanilla, oil, water, vinegar and coffee decoction. Add the wet ingredients to the dry and fold gently until combined. Avoid over-mixing.
  5. Pour batter into the pan, tap gently to release any air bubbles and bake 30–40 minutes, or until a toothpick inserted in the center comes out clean. If baking on the stovetop, place the cake pan on the heated stand, cover and cook 30–40 minutes on low.
  6. Let the cake rest 5 minutes, then unmold and cool completely.

Prepare the chocolate ganache

  1. Heat 3/4 cup heavy cream until very hot (1 minute in a microwave or until it simmers gently on the stove).
  2. Pour over the chocolate chips, stir until smooth and allow to cool to room temperature.

Make the eggless chocolate mousse

  1. Whip 3/4 cup heavy cream in a wide bowl until soft peaks form.
  2. Gently fold in 3/4 cup of the cooled chocolate ganache and 1/4 cup powdered sugar until smooth and airy.
  3. Chill the mousse in the refrigerator to help it set before assembling the cake (12 hours recommended for best texture).

Assemble the cake

  1. Place the cooled cake back in the pan or on a serving plate. Use a toothpick to prick the top all over.
  2. Mix the chocolate syrup with water and brush or pour evenly over the cake to add moisture.
