- 1 medium red pepper, diced (about 1 cup)
- 3 garlic cloves, minced
- 1 pound ground beef (90/10 blend)
- 2 tablespoons tomato paste
- 4 cups reduced sodium beef stock
- 1 large russet potato, diced (about 2 cups)
- 1 (14.5 ounce) can diced tomatoes
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups green beans, cut in 2-inch pieces
- 3 tablespoons chopped fresh parsley
Instructions
- In a large pot over medium heat, warm the olive oil. When it shimmers, add the onion, carrots, celery and red pepper. Season lightly with salt and pepper and sauté 6–8 minutes until the onions are translucent. Add the garlic and cook 1 minute more.
- Add the ground beef to the pot, breaking it into small pieces as you stir to combine with the sautéed vegetables. Continue cooking and stirring until the beef is browned, about 8–10 minutes.
- Stir in the tomato paste and cook for about 1 minute to develop its flavor.
- Pour in the beef stock, then add the potatoes, diced tomatoes, Worcestershire sauce, salt and pepper. Stir to combine, bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the green beans and continue simmering another 10 minutes, or until the potatoes are tender and the green beans are just cooked through.
- Stir in the chopped fresh parsley, adjust seasoning to taste, and serve hot.

- I like a 90/10 ground beef for this soup. If you use a fattier blend, drain the excess fat after browning the meat to keep the broth clean.
