These cinnamon rolls are reliably the star of any breakfast or gathering. The dough bakes up tender and soft, and the addition of a simple sugar-and-cream treatment makes the centers irresistibly gooey. Served with or without frosting, they’re a comforting homemade treat that feels special every time.
I still smile when I remember the biggest compliment I received for these: Doug’s grandfather — who affectionately calls them “snails” — asking for seconds. He asks about them whenever we visit, which is the highest praise in our house.
We’ve also experimented with an unusual pairing suggested by a friend: chili served over cinnamon rolls. At a Friendsgiving tasting it drew curious smiles and positive reactions. That twist isn’t part of the standard recipe below, but it’s fun to try if you enjoy bold, savory-sweet contrasts.
Use these rolls for a family brunch, a cozy weekend bake, or whenever you want warm, sticky happiness on a plate.
How to make Cinnamon Rolls gooey
The trick to achieving a rich, gooey cinnamon roll comes from a simple technique popularized by copycat bakery-style recipes: pour warm cream over the rolls just before baking. This helps keep the dough soft and creates that signature sticky interior. In my version I use coconut cream for extra richness, but whole cream or half-and-half will work equally well.
Ingredients

Dough
- 4 cups all-purpose flour
- 1 cup warm milk
- 1/2 cup granulated sugar
- 1/3 cup salted butter (melted)
- 2.5 teaspoons instant dry yeast
- 1 teaspoon salt
- 2 large eggs
Filling
- 1 cup brown sugar
- 1/2 cup coconut cream (or other cream)
- 1/2 cup salted butter (softened)
- 2 tablespoons cinnamon
- Dash of nutmeg (optional)
Frosting
- 2 cups powdered sugar
- 6 ounces cream cheese (softened)
- 1/3 cup salted butter (softened)
- 1/2 tablespoon maple extract or vanilla extract
How to make cinnamon rolls
If you have a stand mixer, fit it with the dough hook for the easiest handling; otherwise, a large mixing bowl and some elbow grease will do the job.
Creating the dough
- Combine the eggs, melted butter, sugar, warm milk, and instant dry yeast in a large bowl or the bowl of a stand mixer. Mix until blended.
- Add the salt and flour and continue mixing until a rough dough forms.
- Knead the dough for 5–7 minutes (increase mixer speed if using). The dough should feel slightly sticky; if it’s too wet, add up to 1/2 cup (about 68 g) extra flour, a little at a time.
- Cover and let the dough rise until doubled in size, about 30 minutes. While it proofs, prepare the filling.
Mixing the filling
- Mix the softened butter, brown sugar, cinnamon, and the dash of nutmeg until well combined and spreadable.
Creating the rolls

1. Lightly flour a work surface. Roll the dough into a large rectangle roughly 24″ x 16″.

2. Spread the filling evenly over the dough, leaving a little margin along one edge.

3. Roll the dough tightly like a jelly roll, then slice into even pieces. For standard rolls, cut into 12 slices; for a cake-style presentation, cut the roll in half lengthwise and arrange pieces to form a round platform.

4. Place the slices in a greased pan so they have room to expand.
5. Cover and allow the rolls to proof for 20 minutes.
6. Preheat the oven to 375°F (190°C).

7. Just before baking, warm the coconut cream (or your choice of cream) and pour it evenly over the rolls so they are well soaked. This is the step that yields the gooey interior.

8. Bake for about 20 minutes. Baking time may vary with pan type and roll thickness; bake a few minutes longer if you prefer more browning.
Make the frosting
- Beat the softened cream cheese, softened butter, maple or vanilla extract, and powdered sugar until smooth and spreadable.
Frost the rolls

- After the rolls come out of the oven and have cooled slightly, spread or pour the frosting over them while still warm so it melts into the crevices.
- If you’re trying the chili variation and the chili is already prepared, serve a small scoop on top for a playful savory contrast.
- Serve warm and enjoy.
Tips
- Substitute coconut cream with whole cream, half-and-half, or heavy cream if you prefer.
- Softened butter mixes more easily; measure and soften for the filling and frosting.
- A stand mixer with a dough hook speeds up kneading and gives a consistent result.
- A hand mixer is helpful for whipping the frosting smooth.
- A round cake pan works well if you want a cake-style presentation—the shape helps the rolls soak up the cream.
- Swap the maple extract for other flavored extracts to suit your taste.
