Ingredients

  • 1 cup (200 g) mixed beans, lentils and whole grains, soaked overnight and cooked, or equivalent canned beans (see notes)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 200 g (7 oz) green beans, trimmed and chopped
  • 1 zucchini, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon chili flakes (optional)
  • ½ teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 2 bay leaves
  • 2 × 14 oz (400 ml) cans crushed tomatoes
  • 500 ml (2 cups) vegetable stock (or a mix of vegetable and bean broth)
  • 200 g (7 oz) spinach
  • Chopped parsley to garnish
  • Ciabatta bread, to serve
  • Vegan pesto, to serve (optional)

Instructions

  1. Cook beans and grains: If using dried beans and grains, drain the soak water, place them in a pot with three times their volume of fresh water and simmer for about 30 minutes until tender. Alternatively, use canned beans to save time (see notes on conversion).
  2. Sauté the soffritto: Heat olive oil in a large pot. Add onion, carrots and celery and cook over medium-high heat for about 5 minutes until softened. Add green beans, zucchini and garlic and cook for another 4–5 minutes, stirring occasionally.
  3. Make the soup: Add basil, thyme, oregano, chili flakes, pepper, salt and bay leaves. Stir in crushed tomatoes, vegetable stock and the cooked beans and grains along with their cooking liquid (or add extra stock if using canned beans). Bring to a gentle boil.
  4. Finish: Stir in the spinach and simmer with the lid on for about 10 minutes to let flavors meld. Remove bay leaves, adjust seasoning if needed.
  5. Serve: Garnish with chopped parsley and serve hot with ciabatta and optional vegan pesto.

Notes

The rough conversion from dried to canned beans is about 1:3 by volume. If a recipe calls for 1 cup dried beans, you can use approximately 3 cups of cooked or canned beans (drained).
