Method

The recipe is straightforward. Start with the filling because it takes longer to cool and needs whipped cream folded in. The crust is quick to prepare and bakes while the filling cools.

  1. Combine the sugar, cornstarch, instant espresso, cinnamon, salt, whole egg and egg yolks in a medium saucepan. Whisk until smooth.
  2. Slowly whisk in the measured heavy cream and milk, adding in small portions and whisking thoroughly after each addition to prevent lumps.
  3. Place the pan over medium heat and whisk constantly until the mixture begins to thicken. Reduce heat to low and continue stirring, scraping the sides and bottom so nothing scorches.
  4. Once the mixture bubbles and has thickened for about 2 minutes (roughly 10–15 minutes total cooking), remove from heat and stir in the vanilla. Let the pudding cool to room temperature.
  5. While the pudding cools, prepare the crust: cream the butter and sugar, add the egg yolk and vanilla, then mix in the flour, cocoa, espresso powder, cinnamon and salt until just combined. Add a tablespoon of water if needed to bring the dough together.
  6. Press two-thirds of the dough up the sides and across the bottom of a pie pan; use the remainder to form a smooth bottom layer. Chill the crust for about an hour, then bake at 350°F (175°C) for 20–22 minutes. Cool completely.
  7. Whip ½ cup of heavy cream to stiff peaks and gently fold it into the cooled coffee pudding until uniform and streak-free. Pour the filling into the cooled crust, smooth the top and refrigerate for at least one hour. Cover the surface with plastic wrap touching the filling to prevent a skin from forming and chill until fully set.
  8. For the topping, whip chilled heavy cream with powdered sugar, espresso powder and a splash of vanilla until stiff peaks form. Pipe or spread the coffee whipped cream over the chilled pie and dust lightly with cinnamon just before serving.

Tips

Plan ahead when you can. The filling benefits from resting in the refrigerator for 24–48 hours before assembly to let the flavors meld. Keep plastic wrap touching the surface of the filling so a skin does not form.

Do not add the final whipped cream topping until just before serving for the best texture and appearance.

If you prefer a stronger coffee presence, increase the instant espresso or espresso powder in the filling or in the whipped cream, but avoid more than doubling the specified amount to prevent bitterness.

  • 1/3 cup powdered sugar
  • 1 teaspoon espresso powder

Instructions

Coffee Pudding Filling

  1. Whisk sugar, cornstarch, espresso, cinnamon, salt, whole egg and yolks in a saucepan until smooth.
  2. Gradually whisk in the 2/3 cup heavy cream and the whole milk, adding a little at a time to prevent lumps.
  3. Over medium heat, whisk constantly until the mixture thickens. Reduce to low and cook, stirring and scraping, until bubbling for about 2 minutes.
  4. Remove from heat, stir in vanilla, and cool to room temperature. Whip 1/2 cup heavy cream to stiff peaks and fold gently into the pudding.
  5. Pour into the cooled crust, smooth the top, cover the surface with plastic wrap touching the filling, and chill until set.

Chocolate Cookie Crust

  1. Cream butter and sugar until combined. Add egg yolk and vanilla and mix for 2 minutes.
  2. Stir in flour, cocoa, espresso powder, cinnamon and salt until just combined. Add water if needed to bring the dough together.
  3. Press two-thirds of the dough into the sides and bottom of a pie pan; reserve the rest for the remaining bottom layer.
  4. Chill about 1 hour, preheat oven to 350°F (175°C) and bake 20–22 minutes. Cool completely.

Coffee Whipped Cream

  1. Beat chilled heavy cream with powdered sugar, espresso powder and vanilla until stiff peaks form.
  2. Pipe or spread the whipped cream over the chilled pie and dust lightly with cinnamon just before serving.

Notes

I recommend making the pudding filling 24–48 hours ahead to deepen the flavor. Keep plastic wrap touching the surface to avoid a skin. Make the final whipped cream just before serving.
