Turn roasted eggplant into a creamy, smoky dip perfect for parties or healthy snacking. With simple ingredients like tahini, yogurt, and garlic, this versatile recipe works as both a spread and a topping—an unexpected hit even for eggplant skeptics.
I wasn’t always an eggplant fan. Its texture can be off-putting when it’s spongey or mushy, and usually I only enjoy eggplant when it’s crisped in an air fryer or stuffed with lots of cheese. But roasting and then pureeing eggplant into a dip completely changes the experience. The roasting concentrates flavor and softens the flesh into a silky base that blends beautifully with yogurt and tahini.
I first made this dip for a New Year’s Eve party and promptly ate more pita triangles than I’d like to admit. Beyond being party-friendly, the dip is surprisingly adaptable: use it as a sandwich spread, a binder in chicken salad, or a flavorful topping for roasted vegetables. It also works well in wraps or as an accompaniment to crudités.

How to Make the Best Roasted Eggplant Dip
Total time is about 45 minutes, most of which is hands-off roasting. The process is straightforward: roast, scoop, blend, and season.
Prepare the ingredients
Preheat the oven and line a baking sheet. Poke the eggplant all over with a knife so steam can escape. Wrap whole garlic cloves in foil and place them on the sheet next to the eggplant.
Roast the eggplant and garlic
Roast until the eggplant is soft and the exterior is browned, flipping once halfway through. The garlic should be soft and fragrant. This step develops the dip’s characteristic smoky depth.
Scoop and blend
Allow the eggplant to cool slightly, then slice it open and scoop the flesh into a food processor. Squeeze the roasted garlic from its skin into the processor as well. Add yogurt, lemon juice, tahini, and parsley. Pulse until combined, then run the processor while streaming in olive oil until the mixture is smooth.
Finish and serve
Taste and adjust seasoning with salt and pepper. Transfer to a serving bowl and garnish with toasted pine nuts or pepitas, a drizzle of olive oil, and a sprinkle of parsley. Serve warm, at room temperature, or chilled with pita, crackers, or vegetables.
Recipe Variations
- Add smoked paprika or red pepper flakes for a touch of heat.
- Top with slivered almonds or toasted seeds for extra crunch.
- Make it dairy-free by swapping the Greek yogurt for a plant-based plain yogurt.
- Use a splash of red wine vinegar instead of lemon juice if preferred.
- Serve with gluten-free crackers or vegetable sticks instead of pita.
Recipe Tips
- Roast until tender – The eggplant should be fork-tender for the creamiest result.
- Blend well – If any chunks remain after processing, mash them with a fork or process a bit longer for a uniform texture.
- Use as a spread – This dip makes an excellent sandwich spread, lending a savory, creamy boost to wraps and sandwiches.
FAQ
What’s the difference between this eggplant dip and baba ganoush?
Baba ganoush typically emphasizes a smoky, charred eggplant flavor and often uses less yogurt, so the texture and taste can be a bit different. This recipe leans on yogurt and tahini for extra creaminess and richness.
Should I soak the eggplant before roasting?
No. Roasting whole eggplant produces a creamy, concentrated flesh without the need to soak. Soaking is more common for frying to remove bitterness and prevent oil absorption.
Can I serve this dip cold?
Yes. The dip is delicious chilled and keeps well in the refrigerator for several days. Chilling lets the flavors meld and can make it even more refreshing.
Can I freeze this roasted eggplant dip?
You can freeze it in an airtight container, though the texture may change slightly after thawing. Stir well before serving.
