Baked Chicken Parmesan Pie slice

Ingredients

  • 1 package reduced-fat crescent rolls (Pillsbury or similar)
  • 1 cup reduced-fat or light pasta sauce
  • 12 oz cooked, shredded chicken
  • 2/3 cup light shredded mozzarella
  • 1/2 cup panko crumbs (or regular breadcrumbs)
  • 2 tablespoons finely grated parmesan cheese
  • 1 teaspoon olive oil
  • Fresh parsley, chopped, for garnish

Assembling the pie

How to make Chicken Parmesan Pie (step by step)

  1. Preheat the oven to 350°F (175°C). Spray an 8-inch round pie dish with nonstick spray.
  2. Unroll the crescent dough and press the pieces together to form a crust that lines the pie dish. You may need to pinch or trim pieces to fit. Par-bake the crust for 5–7 minutes until it begins to set but not brown.
  3. Spoon a few tablespoons of the pasta sauce onto the bottom of the prebaked crust.
  4. In a bowl, combine the shredded chicken with the remaining pasta sauce. Spread the saucy chicken evenly into the crust.
  5. Sprinkle the light mozzarella over the chicken, then scatter chopped fresh parsley on top.
  6. In a small bowl, mix the panko crumbs with the olive oil and grated parmesan. Sprinkle this mixture evenly over the cheese.
  7. Bake for 15–20 minutes, watching closely to prevent the crust from burning. Bake until the cheese is melted and the topping is golden.
  8. Slice into six portions and serve hot.

Makes 6 servings.

Variations and tips

  • Use panko crumbs for a lighter, crispier topping; regular breadcrumbs work too but may be slightly higher in points.
  • For easy shredded chicken, cook chicken breasts in a slow cooker with a little broth on low for 4–6 hours—it shreds nicely and stores well for other meals.
  • Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months when wrapped tightly.
  • Try adding a few red pepper flakes or Italian seasoning to the chicken mixture if you like a bit more spice.
