Ingredients

  • 4 chicken drumsticks (with skin)
  • 4 chicken thighs (bone-in, with skin)
  • 1 tsp salt
  • 1 Tbsp chipotle spice
  • ½ tsp garlic powder
  • 3 C frozen mixed vegetables
  • ½ C BBQ sauce, plus extra for glazing
  • Garnish: fresh parsley, chopped

Method

  1. Preheat the oven to 425°F (220°C).
  2. Cut four sheets of heavy-duty aluminum foil, each about 8 x 12 inches.
  3. Lay the foil sheets flat on a clean countertop or work surface.
  4. Place about ¾ cup of frozen mixed vegetables in the center of each foil sheet.
  5. Season both sides of each chicken piece with salt, garlic powder, and chipotle spice.
  6. Use a brush to coat each piece of chicken with BBQ sauce.
  7. Arrange one drumstick and one thigh on top of the vegetables in each foil packet.
  8. Fold the foil over the chicken and vegetables, then roll and seal the edges to make a tight packet.
  9. Place the sealed foil packets on baking sheets, leaving space between packets.
  10. Bake in the preheated oven for 50–55 minutes.
  11. Carefully open one packet and check that the chicken is fully cooked; juices should run clear. For safety, the internal temperature should reach 165°F (74°C).
  12. Remove baking sheets from the oven and carefully open the packets.
  13. Brush more BBQ sauce over the chicken pieces and return them to the oven, uncovered, for about 5 minutes to set the glaze.
  14. Remove the chicken and vegetables from the foil and transfer to plates.
  15. Garnish with chopped fresh parsley and serve.

  • If you prefer boneless chicken, reduce the cook time slightly and check doneness earlier.
  • Use heavy-duty foil to prevent tearing and to hold juices while cooking.
