The holidays are over and it’s time to get back into a routine. One challenge I face is making time for breakfast on weekday mornings. The broccoli cheddar strata cups proved to be a better option: they stay well in the fridge, are already portioned, and can be reheated quickly. Strata—essentially a baked egg-and-bread casserole—is a favorite for brunch, and turning it into individual cups makes it convenient for busy mornings. This version is simple, uses common ingredients, and is easy to customize with the vegetables and cheeses you prefer.

These cups are great for weekend meal prep: assemble them on Sunday and enjoy them all week. I used prosciutto to line the cups for a salty, crisp edge, and broccoli for a green veggie boost, but you can substitute bacon, ham, or a thin slice of bell pepper or mushroom for a vegetarian option. Any sturdy bread and a sharp cheddar work well here.

You will need:

  • 6 thin slices prosciutto (or substitute bacon or ham)
  • 2 slices of bread, cut into cubes
  • ¾ cup chopped broccoli, briefly cooked
  • ⅓ cup shredded or chopped cheddar (sharp cheddar recommended)
  • 6 eggs
  • ¼ cup milk

Notes: Use day-old bread or cubes from a thicker sandwich loaf. If you prefer a milder flavor, swap the sharp cheddar for a mild cheddar or Monterey Jack. For a dairy-free version, leave out the cheese and use a non-dairy milk.

Step 1:
Preheat the oven to 350°F (175°C). Lightly spray a standard cupcake pan with nonstick spray or brush with oil. Press one slice of prosciutto into each of six cups so it lines the cup and forms a little “bowl.” The prosciutto will crisp during baking and help hold the strata together.

Step 2:
Rinse the broccoli and microwave or steam it briefly—about 20–30 seconds—just until it turns bright green and begins to soften. You want it partially cooked so it finishes in the oven without becoming mushy.

Step 3:
Cut the bread into roughly ¼-inch cubes. Toss the cubes so they’re evenly sized; this helps the bread soak up the egg mixture consistently.

Step 4:
Fill each prosciutto-lined cup with a mix of broccoli, bread cubes, and about half of the cheese. It’s fine if the cups are slightly overfilled—the egg will bind everything together.

Step 5:
In a bowl, whisk together the eggs and milk until smooth. Pour the egg mixture evenly into the cups, making sure each cup is filled but not overflowing. Press the bread gently so it soaks up the egg.

Step 6:
Sprinkle the remaining cheddar on top of each cup for a golden, cheesy finish.

Step 7:
Bake for 25–30 minutes, or until the eggs are fully set and a toothpick inserted into the center comes out clean. The prosciutto edges should be slightly crisp and the cheese nicely melted.

Storage and Reheating: Let the cups cool before transferring to an airtight container. Store in the refrigerator and use within 4–5 days. To reheat, microwave a cup for a short burst until warmed through or heat in a 350°F oven for a few minutes until hot. These cups also freeze well—wrap individually and freeze up to 1–2 months; thaw overnight in the refrigerator before reheating.

  • Vegetable swaps: spinach, roasted red pepper, zucchini, or asparagus work well.
  • Cheese options: try Gruyère, feta, or pepper jack for different flavors.
  • Make vegetarian: omit prosciutto and brush the pan with oil, or line with a thin slice of roasted pepper for color and structure.
  • Seasoning: add a pinch of salt, pepper, or a sprinkle of dried herbs to the egg mixture for extra flavor.
