A single 8-ounce block of cheddar grates quickly, especially when it’s very cold—so pop it in the freezer for a few minutes if it seems soft.
If you’re using a food processor, grate the cheese, spread it on waxed paper, and set it aside while you mix the other ingredients. If grating by hand, work over a bowl to catch the shreds and keep things tidy.
Whirl Together the Rest of the Ingredients

Start by softening the cream cheese so it will blend smoothly. Then add the remaining ingredients (except the chopped nuts) and pulse or mix until everything is evenly combined. Scrape down the bowl once or twice to make sure there are no dry pockets.

Fold in the grated cheddar and mix until the texture is uniform. The mixture should be thick and spreadable but still easy to shape.

Turn the cheese mixture out onto waxed paper and use your hands to form it into a ball roughly the size of a softball. This is a fun, hands-on step—just make sure your hands are clean.

Place a cup of chopped nuts in a shallow bowl, set the cheeseball on top, and press the ball gently into the nuts. Rotate and press until the entire surface is coated—crispy nuts add a nice contrast to the creamy center.
