I love serving soup to my family because it’s easy to prepare and easy to eat—just ladle into bowls and serve. On busy nights this Whole30 creamy chicken soup gets dinner on the table with minimal fuss. It’s an excellent one-pot meal that keeps the kitchen cleanup to a minimum and delivers comforting, familiar flavors.

One-pot meals save time: no separate meat prep, no juggling multiple pans, and fewer dishes to wash. When I can make a healthy, satisfying dinner in a single pot, I’m a happy cook.

WHAT IS THE WHOLE30?

If you’re new to Whole30, the program focuses on eating whole, unprocessed foods for 30 days. That means prioritizing vegetables, unprocessed meats, healthy fats, and eliminating packaged foods, grains, dairy, added sugars, and certain additives. Many people use the Whole30 as a reset to improve eating habits and reduce cravings.

My family has done Whole30 several times. Because our children don’t always follow the plan, I sometimes cook separate items for them while preparing Whole30-compliant meals for the adults. To make this easier, I batch-cook proteins and vegetables at the start of the week and remix them into meals like this creamy chicken soup.

WHOLE30 APPROVED MEALS

Whole30 meals typically include lots of vegetables, protein from unprocessed meats, and healthy fats like coconut oil or ghee. Grains, processed foods, added sugars, and dairy are excluded. Potatoes and sweet potatoes are allowed if you want a starchy element. When making soups and sauces, use Whole30-approved thickeners such as arrowroot powder instead of flour or grain-based thickeners.

Check spice labels: some blends include sugar, fillers, or additives that aren’t Whole30-compliant. Homemade spice mixes are an easy way to keep bold flavor without hidden ingredients.

TASTY WHOLE30 CHICKEN SOUP

I aim to include bone broth and soups on our weekly menu because they’re nourishing and versatile. Homemade bone broth is simple to make—just bones, water, and a long simmer for rich flavor and added nutrients. You can use chicken or turkey broth as the base for this recipe.

For the chicken in this soup, bone-in cuts (thighs or legs) give extra flavor and are ideal if you plan to make broth afterward. If you prefer white meat, cooked shredded chicken breasts work fine too.

WHOLE 30 APPROVED SOUPS

Many traditional soup recipes use flour or cream to thicken. This Whole30 version uses full-fat unsweetened canned coconut milk for creaminess without dairy. Coconut milk blends seamlessly into savory soups and adds richness while staying compliant. Use unsweetened, ingredient-minimal canned coconut milk for the best result.

Keep healthy fats in your recipe—use avocado oil, coconut oil, or ghee (if your plan allows clarified butter alternative). Avoid processed vegetable oils and butter if you’re strictly following Whole30 rules.

HOW TO MAKE CREAMY CHICKEN SOUP (WHOLE30)

This Whole30 creamy chicken soup is straightforward: sauté aromatics, add vegetables and broth, simmer until potatoes are tender, then stir in coconut milk and fresh herbs. Fresh herbs like parsley, thyme, and rosemary brighten the soup; use dried herbs if that’s what you have on hand, but fresh makes a noticeable difference.

When you first try coconut milk in a savory soup, the flavor may surprise you, but it blends into the broth and enhances texture without tasting overtly coconutty—most families enjoy the result.

HOW TO FREEZE SOUP

If you’re already making a pot of soup, double or triple the batch and freeze extras. Cool the soup completely before transferring to freezer-safe containers, leaving room for expansion. Store in half-gallon mason jars or heavy-duty freezer bags, and label with the date. Properly frozen, this soup will keep for up to six months; in a deep freezer it can last longer. If using bags, lay them flat to freeze and avoid stacking until fully solid to prevent sticking.
