- 2 limes, juiced

- 2 Tbsp cilantro, chopped
- ½ tsp chili powder
- ½ tsp salt (adjust to taste)

- 3 ears of corn (about 3 cups of kernels)
- ⅓ red onion, finely chopped
- 3 Tbsp cilantro, chopped
- ¼ cup cotija cheese, crumbled
- 3–4 limes, juiced
- Salt & pepper, to taste
- Remove husks and boil corn cobs 1–2 minutes until kernels are plump and bright; cool and cut the kernels from the cobs. Combine kernels, red onion, cilantro and cotija in a bowl. Add lime juice, season with salt and pepper, toss and chill before serving.

Can I make anything in advance?
Yes — most components store well and make weeknight assembly quick:
- Tostada shells: Bake, cool and store in an airtight container or bag at room temperature for a day or two to keep them crisp.
- Black beans: Refrigerate in a sealed container. Reheat in a saucepan over medium heat with a splash of water to loosen the texture.
