Brisket Grilled Cheese is a delicious way to turn leftover smoked brisket into an indulgent sandwich. It works equally well on an outdoor griddle or on the stovetop and comes together quickly after a day of cooking. If you love grilled cheese and want to make the most of smoked brisket, this sandwich is a perfect, flavorful option.
If you own a Blackstone griddle or are thinking about getting one, this is a great recipe to try. Smaller griddles are convenient for camping and job-site cooking, while larger griddles make it easy to cook for family and guests at home. A simple flat top gives even heat and plenty of surface area to crisp the bread and melt the cheese without fuss.
I use a compact griddle for travel and a larger griddle at home. If you’re new to griddles, a basic guide to setup and care will help you get the best results and extend the life of your equipment.
Brisket Grilled Cheese Ingredients:
- Texas toast or a sturdy bread of your choice
- Butter, softened
- Cheddar cheese (shredded or sliced)
- Leftover smoked brisket, shredded or sliced
How To Make Brisket Grilled Cheese:
Prepare the griddle or pan. Lightly oil a Blackstone griddle or heat a skillet over low-medium heat. A well-heated surface will brown the bread without burning it.
Butter the bread. Spread softened butter on one side of each slice of Texas toast. Use two slices per sandwich.
Layer the cheese. Place shredded or sliced cheddar on the unbuttered side of one slice of bread.
Warm the brisket. If your brisket was refrigerated, briefly warm it in the microwave or a pan so the sandwich will be hot throughout. You can also warm the brisket on the griddle while you assemble the sandwich.

Assemble the sandwich. Top the cheese with shredded or sliced brisket, then add a little more cheese over the meat to help the layers stick together as the cheese melts. Use brisket with a bit less fat for easier flipping and less grease inside the sandwich.
Close and butter. Place the second slice of bread on top, buttering the outer side that will contact the griddle.

Griddle or pan cook. Place the assembled sandwich on the warm griddle or in the skillet. Cook until the bottom is golden brown, then carefully flip the entire sandwich to brown the second side.
Melt the cheese. After flipping, you can cover the sandwich briefly with a dome or a lid to trap heat and encourage even melting. If you don’t have a melting dome, a lid from a pan works fine for a minute or two.

Serve immediately. Remove the sandwich when the bread is crisp and the cheese is fully melted. Let it rest for 30 seconds, then slice and enjoy.

Bread To Use For Grilled Cheese Sandwiches
Choose a sturdy bread that holds up during flipping and contains the brisket and melted cheese. Thicker slices give a better bite and turn golden without collapsing.
- Frozen Texas toast (pre-buttered makes it easy)
- Texas toast loaf (thick, sturdy slices)
- Sourdough
- French bread
- Ciabatta
- Rye
- Whole wheat
- Artisan loaves

- Monterey Jack
