This quick roasted shrimp and veggie couscous recipe is designed for speed and flavor. Using whole-wheat couscous keeps the dish hearty and wholesome while the vegetables add color, texture, and freshness. The method is straightforward: roast the seasoned shrimp, steam couscous in savory vegetable broth, and sauté a mix of onions, bell pepper, and mushrooms. The result is a vibrant, protein-forward meal that suits weeknight dinners, light lunches, or entertaining when you want something that feels special but is fast to prepare.

Tips for best results: thaw shrimp thoroughly if using frozen, pat them dry for better browning, and avoid overcooking — shrimp are done as soon as they turn pink and opaque. Customize the vegetables to what you have on hand: zucchini, cherry tomatoes, or spinach would all work well. A squeeze of lemon or a drizzle of olive oil at the end brightens the flavors without adding complexity.

Scale

Ingredients

  • 12 oz large shrimp, peeled and deveined, tails on (frozen shrimp are fine; thaw and pat dry)
  • 1 1/3 cup (7.6 oz box) whole wheat couscous
  • 1 1/2 cup vegetable broth (use low-sodium if preferred)
  • 2 tablespoons olive oil, divided
  • 1 small purple onion, diced
  • 1 bell pepper, diced
  • 6 mushrooms, sliced (or 1 cup chopped mushrooms)
  • Salt and freshly ground black pepper, to taste
  • Minced garlic and dried onion flakes (or use 1–2 cloves fresh garlic), plus any favorite seasonings such as paprika, lemon pepper, or a pinch of red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or foil for easy cleanup. Arrange the shrimp in a single layer and season with salt, pepper, dried garlic, dried onion flakes, or your preferred spice blend. Roast 8–10 minutes, until the shrimp are pink and just cooked through; cooking time depends on shrimp size.
  2. While the shrimp roast, bring the vegetable broth and 1 tablespoon olive oil to a boil in a medium saucepan. Stir in the whole-wheat couscous, remove from heat, cover, and let stand for 5 minutes to absorb the liquid.
  3. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion, bell pepper, and sliced mushrooms until tender, 4–6 minutes. Season with salt and pepper. Add minced fresh garlic in the last minute if using.
  4. Fluff the couscous with a fork, then fold in the sautéed vegetables. Taste and adjust seasoning as needed. If the couscous seems dry, stir in a splash of olive oil or a little extra broth.
  5. Serve the warm couscous topped with the roasted shrimp. Finish with an optional squeeze of lemon, chopped fresh herbs, or a drizzle of extra-virgin olive oil. Enjoy immediately.

Serving suggestions and storage: This dish is excellent with a simple green salad or roasted asparagus. Leftovers keep well in the refrigerator for 2–3 days; store shrimp and couscous together or separately. Reheat gently to avoid overcooking the shrimp.

Variations: Swap the whole-wheat couscous for quinoa, bulgur, or regular couscous. Add spinach or arugula to the warm couscous for extra greens, or toss in toasted pine nuts for crunch.
